Thank you for this wonderful article! I fell in love with nettles as food in Italy. One of our local restaurants made ravioli di ortica with fresh tomato sauce. It was a revelation. I now make my own version with ramps. Now I live in Southern Germany and we have so many nettles. I just wilt them in olive oil and salt, or chop them into gnocchi. They also make an excellent fertilizer for tomatos! It's wonderful that you are celebrating this beautiful and most nutritious plant. 🧡
